    This is the standout lot for this year's crop from our friends Pablo and Eva del Cid at Finca el Jardin. There were only about 120 pounds of this very special coffee available, so we grabbed it all!  

    Pacamara is a large varietal, fermented for 9 days in an anaerobic environment (in large blue barrels). They were then laid out to dry on raised beds, fully intact, and left to dry slowly in their greenhouse. They were dry-milled to the highest standards available at the leading dry mill in Guatemala. This lends a very unique flavor profile, with a huge amount of sweetness and lots of tasty fruit notes without being too funky.

    We're roasting this one pretty light to ensure the natural sweetness stays up front and to really let those juicy fruit notes sing. Definitely not a coffee for everyone, but for those looking for something unique or a little different, this is the coffee for you!
