This was our first farm-direct coffee we were able to offer and still remains one of our favorite seasonal coffees.  We've been working with the farmer, Alipio Munoz, since 2018 and we buy his entire crop. Embracing traditional techniques and adapting to new ones, Alipio has been reinvesting in his farm to steadily increase the quality.  

Most recently, he built a meticulous covered drying patio on the roof of his home that provides good cross breeze while also keeping it protected from rain or direct sun, ensuring an even drying of his crop before sending it off to the dry mill.  See the photo of Alipio showing it off in the photos.  

By buying all of his harvest at a premium price, we are excited to support the success and passion at La Capilla. A beautiful coffee that is sweet with a syrupy body while offering great cherry notes with a malic acidity. It's a cafe favorite and we know that however you choose to brew, you'll be happy with what's in your cup.
