This is our fifth year working with Pablo del Cid from Finca el Jardin. This year we knew we wanted to work together again, so we got in early on some really delicious samples and jumped at the opportunity to grab some different lots from his family farm.
You can really taste the hard work that goes into growing and processing this coffee. While washed coffees shine in Guatemala, there is absolutely room for a good natural process, especially from a family farm that cares for every coffee-cherry they grow. Hand picked, sorted, then meticulously dried on raised beds, Pablo nailed this one!
One of the benefits of working with a producer year after year, is that they learn what we like, which helps them manipulate the processing to meet what we love in this style of coffee. This coffee has soft fruit notes, like raspberry, plum, and acai.
