    This coffee comes to us Finca Calle Lilles, one of only a handful of farms milled at the Las Lajas micromill, ran by Oscar and Francisca Chacon.  Located in Sabanilla de Alajuela in the Central Valley of Costa Rica,  the Chacons are third generation farmers who have fully committed to high-end cultivation and processing at the producer level to make sure they're getting the most out of their farms.  

    We're excited to grab a special lot from these folks who we have bought from a couple times in the past. Their coffees are really fun and exciting, really great coffees to shake up your usual morning cup.  We get a super jammy vibe off this one, where you definitely taste a bit of funk and the process, but we're absolutely here for it. 

    What makes it a "Black Diamond Natural?"  From the importer: "This is a natural aerobic process, where once the cherries are harvested, they are transferred to the mill for their classification, where only those with a high percentage of brix degrees are chosen. After this they are transferred to the greenhouse patio for their dehydration. During the first week the cherries are placed in a thick layer, in order to ferment aerobically. After this first week the coffee is spread in a thin layer until the drying process is finished."
